Hibiscus Lime Popsicles – Zesty Summer Treat

Hibiscus Lime Popsicles Bright, zesty & floral — the ultimate summer cool-down treat!

When the summer heat is in full swing, there’s nothing more refreshing than a tangy, floral popsicle straight from the freezer. These Hibiscus Lime Popsicles are a vibrant, naturally colored delight made with real ingredients and a twist of citrus. Perfect for kids, guests, or your own quiet afternoon break.

Ingredients:

2 cups water

1 cup sugar

½ cup dried hibiscus loose tea (or 4–5 hibiscus tea bags)

Zest of 1 lime

¼ cup fresh lime juice

¼ tsp sea salt

1 cup cold water

 Method:

1. Make a Hibiscus Syrup
In a saucepan, bring 2 cups of water and sugar to a gentle boil until the sugar fully dissolves. Turn off the heat and stir in the hibiscus.

2. Steep and Strain
Let the hibiscus steep for at least 15 minutes (or up to an hour for a deeper flavor). Strain and discard the solids. Chill the tea in the fridge.

3. Brighten it Up
Once cool, stir in the cold water, lime zest, fresh lime juice, and a pinch of sea salt. The salt may seem odd—but trust me, it subtly enhances the floral-citrus balance.

4. Freeze
Pour the mixture into popsicle molds. Freeze for 4–6 hours or until completely solid.

5. Unmold & Enjoy
Run warm water over the outside of the mold for a few seconds to release. And there you have it—refreshment in its prettiest form.
